New OpenAPI functionality: Set custom field values against a Customer

Consumers of our OpenAPI will now be able to set custom field values against a Customer if the account config supports this.

Custom field values can be provided when:

1. Creating a new Customer (docs)
2. Updating an existing Customer (docs)
