See only the Custom Fields that matter on a Project

Your Projects are less cluttered. The Custom Fieldsets you have filled in are the ones on screen, so the detail in front of you belongs to the Project you are looking at.

Everything else is one click away, gathered as Other Fieldsets. Open it, type a few letters to find the one you want, and fill it in exactly as you do today. It joins the others as soon as it has something in it.
